Taste of Tradition: Paneer Bhuna Masala the Dhaba Style

Ingredients:
Paneer-250grams cut into cubes
Butter-1/4cup
Cumin seeds-1/2tsp
Onions-3 medium size
Green chilly-2 finely chopped
Red chilly powder-2tsp
Turmeric-1tsp
Coriander powder-2tsp
Prepared Bhuna Masala-2Tbsp
Tomatoes-2 medium size
Cashew nuts-8-10
For Bhuna Masala:
Coriander seeds-2Tbsp
Cumin seeds-2Tbsp
Black Pepper corns-1Tbsp
Dry red chillies-3-4
Cloves-6-7
Black cardamom-2
Bay leafs-2
Kasuri Methi-2tsps
Preparations:
- Dry roast the ingredients mentioned in bhuna masala, make it into a powder.
- Make puree of tomatoes.
- Make fine paste of cashews
- Chop finely 2 onions and 1 onion inĀ
- to cubes.
METHOD:
- Heat a Iron wok add butter and 1tbsp oil and add finely chopped 2 onions and make them golden brown. Add green chillies.
- Add all dry powder masalas(Red chilly powder, Turmeric, Coriander powder, Prepared Bhuna Masala-2Tbsp). Fry till nice aroma. Add little water to avoid burning.
- Add tomato puree and fry till oil separates.
- Add cashew paste and mix well.
- Add 2 cups of water and simmer for 5 mins.
- Add paneer cubes and onion cubes mix well. Simmer for 2 minutes.
- Add some grated paneer and kasuri methi mix well. Serve hot and Enjoy!!!
Tips:
- Always use iron kadai when cooking in dhaba style.
- Transfer the curry after cooking into other bowl, because curry turns black when cooked in iron utensils.
