Ingredients:
Chicken with bone-½kg
Tomatoes-3 medium
Green chillies -1 finely chopped
Cashews-12 soaked in water
Oil-4Tbsp
Butter-1Tbsp
Cumin seeds-1tsp
Cardamom -2
Cinnamon -½”
Bay Leaf-1
Ginger -½inch
Garlic cloves-2-3
Coriander stalks-4-5
Pink salt-a/c taste
Onions-2 medium
Kashmiri Red chilli powder -3tsp
Turmeric ¼tsp
Coriander powder -1tsp
Cumin powder -½tsp
Garam Masala-1tsp
Kasuri methi -1tsp
Fresh Cream -2Tbsp
Coriander leaves for garnishing -few

Preparations:

  • Soak cashews in hot water for 5 minutes. set aside.
  • Finely chop onions. In a pan add 1Tbsp oil , 1Tbspbutter add washed chicken pieces, little salt, 1 tsp red chilli powder and kasuri methi, Fry on high flame till you get brown spots. Set aside.Butter Chicken with bone
  • In mixer grinder add roughly chopped tomatoes, coriander stalks,Ginger, soaked cashews, red chilli powder, Coriander powder, Cumin powder.Make it into fine paste without adding water. Set aside.Butter Chicken with bone

METHOD:

  1. In a pan heat 2Tbsp oil, and 1Tbsp butter, add cumin seeds, cardamom, cinnamon,bay leaf, finely chopped garlic , chopped green chillies, stir for 1 minute. Butter Chicken with bone
  2. Add onions fry till light golden brown colour add turmeric, red chilli powder stir and add ¼cup hot water. Cook for 2 minutes.Butter Chicken with bone
  3. Add grounded tomato paste, add salt and a pinch of sugar to balance tanginess. Now cook for 10-15 minutes stirring in between to avoid burning. Butter Chicken with bone
  4. Add 1 cup hot boiling water, stir and adjust salt. Now add fried chicken pieces mix well. Close the lid till chicken is done. Add hot water in between if necessary.Butter Chicken with bone
  5. Open the lid add kasuri methi, 1Tbsp butter، garam masala ، fresh cream mix gently . Finally add chopped coriander leaves .Butter Chicken with bone
  6. Serve hot and ENJOY!!! with paratha or jeera rice.

Tips:

  • Serves 2-3 as a whole meal.
  • Goes well with Roti, Paratha, Phulka or Jeera Rice.
  • You can try this same recipe with Paneer.
