Butternut Squash (Pumpkin)Curry- A Hug in Bowl
This is one of the best healthy and nutritious curry for the people on weight loss journey and tired of eating regular salad and sprouts.. Here is a new innovative curry I have made for you which is healthy and nutritious. It is very subtle in taste and goes well with roti or pulka. One bowl of curry with 1 or 2 pulkas accomplish your full meals without any extra salads. I used very few ingredients, which holds many nutrients within them. Pumpkin is very rich in Iron. It is very underrated because it’s easily available in India. We generally used it for pujas or hanging for new house. Though it’s different variety of pumpkin, but they also holds equal nutrients as this butternut squash. Without delay let’s get started making this tasty Moong Sprouts Curry.
Ingredients:
Pumpkin-one small medium size
Oil-2Tbsp
Green chilli -2
Pink salt-as per taste
Freshly grated coconut -½cup
Cumin seeds -1tsp
Mustard seeds-½tsp
Black gram daal-1tsp
Chana daal-1tsp
Coriander powder-½tsp
Cumin powder -½tsp
Red chilli powder -1½tsp
Garam masala-1tsp
Curry leaves-2sprigs
Turmeric -¼tsp
Coriander leaves -few for garnishing
Preparations:
- Wash the pumpkin, remove outer hard skin and inside seeds.
Cut into small cubes. Set aside.
METHOD:
- Heat a wok or pan, add oil.
- Add cumin seeds, mustard seeds, black gram daal and Chana daal. Fry for 1 minute till the daals changes it color. Now add curry leaves, fry for a second.
- Add cubes of pumpkin and fry on medium to high flame for 2 minutes. The pumpkin changes it color lightly.
- Add turmeric and salt, mix well. Add ½glass water and mix ( there’s no need to add water if you see that it’s about to cook), cover it and cook till pumpkin cubes are cooked 80%. Don’t forget to stir in between to avoid burning.
- Open the lid, add coriander powder, cumin powder, red chilli powder (add little 2Tbsp water if you see masalas are burning)and stir we’ll on high flame for minute.
- Lower the flame, cover the lid and cook for 2 more minutes.
Open the lid freshly grated coconut, slit green chillies mix well and garnish with coriander leaves…ENJOY!!!
Tips:
- Serves 3-4.
- Goes well with roti or phulka or as a side dish in rice and daal.
- If you do not have fresh coconut, just soak dry coconut in water for 30 mins.
- You can make this same recipe with any kind of pumpkin or gourds.
