Ingredients:

Ridge gourd-250grams

Tamarind-one Gooseberry size

Oil-1Tbsp

Split black gram daal(Urad dal)-1tsp

Bengal gram daal-(chana dal)-1tsp

Green chillies-6-7

Curry leaves-few

Turmeric-1tsp

Coriander leaves-½bunch

Garlic cloves-4-5

Cumin Seeds-1tsp

For Tempering:

Oil-1Tbsp

Split black gram daal(Urad dal)-1tsp

Bengal gram daal-(chana dal)-1tsp

Cumin Seeds-1tsp

Mustard Seeds-1tsp

Curry leaves-few

Dry Red chilly-1

Preparations:

  • Wash ridge gourd thoroughly, remove any fiber if you see. No need to remove skin. Chop into cubes and set aside.
  • Wash tamarind with water and set aside.

METHOD:

  1. Take a wok heat oil add Urad dal, chana dal, fry for one minute.
  2. Add green chillies, fry for 2 minutes. Add curry leaves mix it and take it out.
  3. In the same oil add ridge gourd cubes and fry for 2 minutes. Add salt and turmeric , mix it cover and cook till ridge gourd soften. Do not add any water. Add coriander leaves mix it and cook for 1 minute. Set aside.
  4. Take a mixer grinder add fried green chilly mixture. Add garlic cloves, cumin seeds. Grind well.
  5. Now add tamarind  and cooked ridge gourd. Grind coarsely.
  6. For tempering, heat oil add ingredients mentioned in tempering  one-by-by.
  7. Fry till the chanal dal and urad dall turns crunchy. Now mix above grinded ridge mixture. Mix well till oil is incorporated well.
  8. Serve Hot and Enjoy!! with hot rice.

Tips:

  • Serves 4-5.
  • Goes well plain rice, idli and dosa.
  • Always use tender ridge gourd for this recipe.
