Amaranth Potato Curry Recipe | Nutritious & Flavorful Indian Dish

Amaranth generally referred as “Thotakura” in Telegu, full of nutitional benefits. Today I am going to a simple Amaranth with potato. It is simple yet very tasty recipe. Learn how to make Amaranth Potato Curry – a wholesome and delicious Indian dish. Packed with nutrients, this quick recipe combines tender potatoes and vibrant amaranth leaves in a flavorful spice blend. Perfect for a healthy meal!

Ingredients:

Amaranth Leaves(Thotakura)-5 medium size

Potatoes-1 big or 2 medium

Onion-1 medium size

Tomatoes-2 medium size

Oil-3Tbsp

Mustard seeds-1tsp

Green chillies-2 slit

Curry leaves-few

Turmerice-1tsp

Red chilly powder-2tsp

Salt-a/c taste

Preparations:

  • Clean and wash amaranth leaves. Drain the water completely. Finely chop the leaves and tender stalks.
  • Chop onions, potatoes, and tomatoes. Place the chopped potatoes in cold water to avoid discoloring.

METHOD:

  1. Heat oil in a wok and add mustard seeds, let them crackle, add slit green chillies and curry leaves.
  2. Add onions fry for 1 minute. Add potatoes and fry potatoes are soft. Stirring in between.Amaranth Potato Curry
  3. Now, add chopped amaranth leaves and mix well. Add chopped tomatoes, The leaves oozes out water, fry till all the water evaporates without closing the lid. Add salt and turmeric. Fry till tomatoes are soft.
  4. Finally add red chilly powder, and mix well fry till the oil leaves its sides.
  5. Close the lid and simmer it on low flame for 2 minutes.
  6. Your Amaranth Potato curry is ready to serve. Enjoy!!!

Tips:

  • Serves 3-4.
  • Goes well with Roti, Phulka, Paratha or  as a side dish with dal and rice.
  • You can try this recipe with soaked yellow moong daal instead of potato.
