Bitter Gourd Stir Fry: All Flavor, No Bitterness

Hi Everyone! Today’s recipe is Bitter Gourd Stir Fry. Many people don’t like eating bitter gourd, though it has many nutritional values. Ingredients:

Bitter Gourd-250 grams

Salt-2tsp

Turmeric-½tsp

Oil-2Tbsp

Mustard seeds-1tsp

Chana daal (Bengal gram)-1tsp

Urad daal(Black gram)-1tsp

Curry leaves-2 strands

Dry red chilly-2

Asafetida-pinch

Tamarind extract-1cup

Jaggery-2Tbsp

Rasam powder-2Tbsp

Fresh/Desiccated coconut-½cup

Preparations:

  • Wash bitter gourd, no need to remove its skin. Remove the seeds and slice into thin pieces.
  • Add turmeric and salt mix well and set aside for 30 minutes or 1 hour.

METHOD:

  1. Take a pan heat oil, add mustard seeds crackle them. 
  2. Add chana daal, urad daal, dry red chilly, asafetida and curry leaves fry for 1 minute.
  3. Mean while squeeze the water from bitter gourd which are resting. Make sure you remove all the water oozed from bitter gourd. This step is necessary to reduce its bitterness. Add to the tempering.
  4. Sauté for 3 minutes on medium to low flame, until bitter gourd changes its color.
  5. Add tamarind extract, salt as necessary and jaggery. Mix well and close the lid, cook till bitter gourd is tender stirring occasionally.
  6. Open the lid, and fry till all extra water is evaporated and add rasam powder, coconut.
  7. Combine well and simmer for 2 minutes. The magic Bitter Gourd Stir Fry is ready. Serve hot and Enjoy!!!

Tips:

  • Serves 4-5.
  • Goes well as side dish with plain rice and daal or only with plain rice and ghee.
  • Make sure you select tender bitter gourd for this recipe.
