Howdy Everyone!! Welcome back to my blog. Today my recipe is Mexican Fried Rice, very lite to eat and tasty too. My kids loved this recipe so much so thought of sharing here. It is very easy to make with few ingredients. Whenever I found leftover rice I make this recipe. 

Mexican fried rice is a vibrant, flavorful dish that combines the hearty goodness of rice with the bold, zesty flavors of Mexican cuisine. It’s often cooked with ingredients like bell peppers, onions, tomatoes, beans, and corn, this dish is a delicious, filling meal that can be enjoyed on its own or as a side to grilled meats or tacos. Ingredients:

Onions-3 Medium size(for sauce and gravy)

Tomatoes-3 Medium size

Green chillies or fresh jalapenos-3

Tomato ketchup-4tbsp(for sauce and gravy)

Coriander leaves-handful

Lemon-1

Salt-a/c to taste

Oil-1Tbsp

Butter-1Tbsp

Garlic- 1Tbsp chopped

Onion-1 Medium size

Fresh Tomato puree-½cup

Oregano-2tsp

Cumin powder-1tsp

Red chilli flakes-2tsp

Black pepper powder-pinch

Coriander powder-1tsp

Red chilli powder-1tsp

Cooked Rajma beans-one-third cup

Capsicum-¼cup

Red Bell pepper-¼cup(if available)

Yellow Bell pepper-¼cup(if available)

Sweet corn-¼cup

Cooked or Leftover rice-3 cups

Preparations:

  • Make a paste of  2 Onions ,Tomatoes. Green chillies or fresh jalapenos. Tomato.2Tbsp ketchup, Coriander leaves, Lemon 1tspsalt. Set aside.

METHOD:

  1. Take a large wok add oil and butter, let the butter melt. Add finely chopped garlic fry for few seconds.
  2.  Add 2 finely chopped onions, let them cook till onions turn into light golden brown. Add tomato puree and cook it on high flame for 1 minute.
  3. Lower the flame before adding spices. Add Oregano, Cumin powder, Red chilli flakes, Black pepper powder, Coriander powder, Red chilli powder, tomato ketchup, mix well and cook on high flame for 1 minute.
  4. Add cooked rajma/canned beans, Capsicum, Red Bell pepper, Yellow Bell pepper. Sweet corn,  a pinch of black pepper powder stir and cook on high flame for 3 minutes.
  5. Add cooked or Leftover rice, stir for couple of minutes.
  6. Add handful of chopped coriander leaves. Your Mexican Fried Rice is ready. Enjoy with tomato ketchup and coriander leaves.

Tips:

  • Total cooking time-20 minutes.
  • Serves 3-4.
  • The another method of this recipe  is, while cooking the gravy before adding rice you can add soaked rice and water(for 3cups 2½ cup water. Cook  till rice is done and gently fluff the rice and garnish.
