Ingredients:
For Kofta/Meat Balls
Minced Mutton/Chicken-½kg
Garam Masala-tsp
Red chilli powder-1tsp
Salt-1tsp or a/c taste
Coriander powder-1tsp
Desiccated coconut powder-2Tbsp
Onion-1 medium size chopped
Ginger Garlic paste-2Tbsp
Cashews-10
Roasted chana-2Tbsp(make fine powder with cashews)
Mint leaves-handful
Coriander leaves-handful
Green chillies-2 finely chopped
Butter or Ghee-2Tbsp
Lemon juice-half
Egg-one
For Biryani Gravy:
Oil-½cup
Shahzeera(Caraway seeds)-1tsp
Cinnonmon-1″
Cloves-4
Cardamom-3
Onion-2 medium size thinly sliced
Ginger Garlic paste-2Tbsp
Tomatoes-3 medium size chopped
Red chilly powder-2tsp
Turmeric-½tsp
Coriander powder-1tsp
Cumin powder-1tsp
Garam masala-1tsp
Curd/Yogurt-½cup or 6Tbsp
Mint leaves-few
Coriander leaves-few
Green chilly-3 slit
For Rice:
Basmati Rice-1kg
Shahzeera(Caraway seeds)-1tsp
Cinnonmon-1″
Cloves-4
Cardamom-3
Saffron-pinch, soaked in ¼cup milk
Preparations:
- Grind all the ingredients mentioned in “For Kofta”.
- Make into round balls and fry them. Set aside.
- Wash and soak rice.
METHOD:
- Take a hallow vessel, heat oil and add dry spices as mentioned. Add sliced onions. Brown them.
- Add ginger garlic paste fry for 2 secs. Add chopped tomatoes and fry till tomatoes mashed.
- Now add Red chilly powder, turmeric, garam masala, coriander powder, cumin powder. Add little water to avoid burning, fry for 1 minute.
- Switch off the flame, add whisked curd/yogurt. Switch on the flame and fry for 3 minutes. Add 100ml water and cook for 2 more minutes.
- Now add fried koftas/meat balls. Add mint, coriander leaves and slit green chillies. Cook for 10 minutes without mixing. Switch off the flame and set aside.
- Now cook rice with 3 liters of water with mentioned spices, and mint and coriander leaves. When rice is 80% done drain the extra water and place the rice on top of the kofta gravy with layers.
- Finally on top of rice add saffron milk, fried onions, mint and coriander leaves and ghee.
- Seal it with dough or aluminum foil.
- Place any heavy vessel on top and steam it on high flame for 1 minute and on low flame for 15 minutes.
- Unseal the foil or dough your delicious kofta biryani in ready to serve. Enjoy!! with cucumber raita.
Tips:
- Serves 6-7
- Goes well with cucumber raita or bagare baigan
- Add half lemon juice and 1Tbsp oil while cooking rice to avoid sticking.
