Hello everyone! Cauliflower Stem curry ..sounds different right!! Generally we discard these stems while making any cauliflower dishes. But, its stem are main source of iron. You get nearly 46mg of iron in 100grams of serving. I am sure you will never throw these stems after making this cauliflower stem curry. This recipe is very simple to make and tastes like anything. Initially I thought who will eat these stems. but believe me after making this recipe I never throw away cauliflower stems. Ingredients:

Cauliflower Stem and its leaves if any- Of One big cauliflower

Onion-2 medium size

Green chilly-2

Oil -3Tbsp

Peanuts-¼cup

Turmeric-1tsp

Red chilly powder-2tsp

Coriander powder-1tsp

Maggi Masala-e-Magic-1 sachet(optional)

Coriander leave-for garnishing

Preparations:

  • Thoroughly wash cauliflower stems, they contain lot of dust particles.

 

  • Chop them into cubes and  soak in salt water for 5 mins. Steam them for 10 mins if you find them hard. I prefer to fry them without steaming to hold their shape.

  • Dry roast peanuts and make it into coarse powder. set aside.
  • Finely chop onions and green chilly.

METHOD:

  1. Heat oil in a pan add mustard seeds, crackle them. Add green chillies fry for a minute.
  2. Add Onions and cauliflower stem together. Fry them nicely till they soften. Be patient with this step if you haven’t steamed the stems. Remember to lower the flame while doing this step. Cook covered stirring occasionally without burning them. Sprinkle little water if find it hard.
  3. Add salt and turmeric fry for 1 minute.
  4.  Add red chilly powder and coriander powder, mix well. Cook for 1 minute.
  5. Next add roasted peanut powder and mix gently.
  6. Finally add Maggie Masala-e-Magic ,cover and simmer for 2 minute.

Garnish with coriander leaves and Enjoy!!!Tips:

  • Serves up to 2-3.
  • Goes well with roti, paratha, or plain rice and daal as side dish. Can have it as a snack also.
