Today I’ll show you how to make this tasty Hyderabadi Mutton Tahari in an authentic way. Savor the rich and aromatic flavors of Hyderabadi Mutton Tahari, made in the authentic way. Ingredients:
Basmati Rice-750grams
Oil-4Tbsp
Onions-2 medium size
Tomatoes-2 medium size
Tender Mutton-½kg
Bayleaf-1
Cinnamon-1″inch
Cardamom-2
Cloves-4
Ginger Garlic Paste-3Tbsp
Red chilly powder-2tsp
Turmeric-1tsp
Coriander powder-2tsp
Cumin powder-1tsp
Garam masala-1tsp
Salt- a/c taste
Curd-½cup
Mint leaves-½bunch
Coriander leaves-1 small bunch
Water-3.5 cups or as needed
Preparations:
- Wash and soak basmati rice for at least half-an-hour.
- Wash Mutton thoroughly, drain water completely and set aside.
METHOD:
- Take a pressure cooker/or deep nonstick pot add 4Tbsp oil, bay leaf ,cinnamon, cardamom, clove and onions, fry till onion turns translucent.
- Add washed mutton, turmeric, salt and ginger garlic paste, mix well and fry till the mutton changes its color.
- Add tomatoes and fry till tomatoes get mushy, if you have fenugreek leaves add few, this step is optional.
- Add curd fry well. Till oil oozes out.
- Add 3.5 cups of water, mint leaves, coriander leaves, 2 green chllies , pressure cook for 4 whistles.. or till the mutton is 90% done. If you are cooking in open pot then cook for 15-20 minutes, stirring in between occasionally. Switch of the flame.
- Let the pressure of the cooker releases by itself. Open the lid and add soaked rice, mix well and adjust the salt and 1cup water.
- Cook till the rice and mutton is well combined. Lower the flame when all the water is evaporated and rice if 80% done.
- Place a griddle on stove, then place the pot on it and after 10 minutes switch off the flame. Your Hyderabadi Mutton Tahari is ready to serve . Enjoy!!! with cucumber raita.
Tips:
- Serves 5-6.
- Goes well cucumber raita.
- The trick to cook rice without sticking is when you add rice adjust the water 1″ inch above the rice. Your rice will be fluffy.
