Green chillies-3 slit

Coriander leaves-few for garnishing

Preparations:

  • Clean and Wash chicken thoroughly. Set aside.
  • Clean the fenugreek leaves, wash and set aside.
  • Whisk the curd.

METHOD:

  1. To start, gather your ingredients. You’ll need boneless or with bone chicken, which you’ll cut into bite-sized pieces, and fresh fenugreek leaves that have been carefully cleaned and chopped. Fenugreek leaves, also known as methi, are a key component of this dish, lending their unique taste and aroma.
  2. In a large pan or pot, heat up a drizzle of oil or ghee over medium heat. As the oil heats up, the kitchen is filled with the anticipation of flavors to come. The next step is to add cumin seeds, which sizzle and release a warm, earthy scent as they hit the oil. These seeds are a fundamental spice in Indian cooking, offering a foundation of flavor.
  3. Once the cumin seeds have crackled and infused the oil with their essence, it’s time to introduce finely chopped onions to the pan. The onions sizzle and slowly transform, turning from sharp and raw to golden and aromatic. As they cook, their sweetness intensifies, laying the groundwork for the layers of taste that will develop.
  4. With the onions now beautifully caramelized, it’s time to add ginger garlic paste. The kitchen is filled with the enticing fragrance of these two aromatics melding together. Their combination is the heart of many Indian dishes, infusing the methi chicken with depth and complexity.
  5. A velvety puree of ripe tomatoes is the next addition to the pan. As the puree bubbles and simmers, it thickens and darkens, signaling the development of a rich base for the dish. The tomatoes provide both acidity and sweetness, balancing the flavors of the spices to come.
  6. The stage is now set for the array of spices that will bring the methi chicken to life. Turmeric powder, red chili powder, and coriander powder join the pan, infusing the mixture with vibrant colors and robust flavors. As these spices toast in the heat, they release their full potential, infusing the entire dish with warmth and character.
  7. The chicken is introduced to the pan, and the transformation begins. As the chicken pieces mingle with the aromatic masala, they absorb the essence of the spices, turning from pale to golden brown. The combination of meat and spices is a celebration of taste and texture, a dance of flavors in the making.
  8. Now it’s time for the star of the show: the fenugreek leaves. Their verdant freshness adds a layer of complexity to the dish, introducing a slightly bitter note that harmonizes with the richness of the chicken and spices. The leaves wilt and merge with the other ingredients, creating a symphony of tastes that are both familiar and unexpected.
  9. A touch of yogurt adds creaminess and tanginess to the dish, contributing a luxurious element that enhances the overall experience. Garam masala, a blend of warming spices, is the final touch, infusing the methi chicken with its signature aroma.
  10. After a gentle simmer to meld the flavors, the methi chicken is ready to be savored. The dish is served with a sprinkling of fresh coriander leaves, their bright color and herbaceous essence providing a final burst of freshness.
